It is only a stage3 install now in the Gentoo Handbook.
For the disk for Gentoo, when you create a new image inside of VMware Server (you don't need any of the other ones, it is self-contained), you tell it how much disk space you want it to have. If you have the free space, 10-20G should be plenty, though 8G seems to be common. Depends what you want to do with it, a console only or a full X system with OpenOffice/Firefox. Tell VMware to mount the gentoo iso file for this virtual machine, and follow the Gentoo Handbook for everything else.
Anything specific for Gentoo under VMware is covered in the HOWTO Install Gentoo on VMware in Windows NT/2K/XP wiki article if for some reason you want to compile your own kernel.
