how do i set door to never open and only open when i give them the comand?

Am I to understand that numbers in between 0 and 255 act as a makeshift 'delay' for the opening and closing of doors?

No. You have to convert it to binary to understand it. 0 = off (open doors), 1 = on (closed doors)

0 = 00000000
255 = 11111111

So if you want a certain door tile to be opened, but not the others, you set its position in binary to 1. Then you convert it back to decimal, and use that value. I believe FACTs has a built in program for this feature. Otherwise, you can use calc.exe that every windows comes with.

Yes I know of the FACTS function, but it wasn't explained very well. You could simply set the tiles to a number which I think (since it was on the first release of FACTS) was between 1 and 10.
