I was wondering, with sizes in mind, is there a way I can set up attaching like this without a bot?

Small Attach to Small, Med, & Large.

Med Attach to Med & Large.

Large Attach to Large only.

Any ideas?

Not with current subgame, and probably not ever with it. With ASSS, very easy. With a bot, a bit harder because what will you do when someone does attach to larger ship.

Or you could play around with the attach bounty and initial bounty:
Small ship: loads of initial bounty. High attach bounty
Medium: Some initial, medium attach
Big: Not much, low attach bounty
